لحم البقر بالكاجو مع الأرز الأبيض

المقادير

  • نصف كيلو لحم بقر، مقطع إلى شرائح
  • كوب كاجو محمّص وغير مملح
  • بصلة مقطعة شرائح
  • حبة فليفلة حمراء، مقطعة إلى شرائح
  • حبة فليفلة صفراء، مقطعة الى شرائح
  • ملعقة صغيرة قرفة مطحونة

للصلصة

  • 3 ملاعق كبيرة صلصة الصويا
  • ملعقة صغيرة عسل او سكر
  • ملعقة صغيرة نشا الذرة
  • نصف كوب ماء
  • رشة فلفل أسود
  • ملعقة كبيرة من صلصة sweet and sour sauce

للأرز الأبيض

  • كوبان أرز بسمتي أو أرز أبيض طويل الحبة
  • 3 أكواب ماء
  • ملح حسب الذوق
  • ملعقة صغيرة زيت أو زبدة

طريقة التحضير

  1. تحضير الأرز:
    يغسل الأرز جيداً حتى يصبح الماء صافياً. ضعيه في قدر مع الماء والملح والزيت، واتركيه حتى يغلي. تخفف النار، يغطى القدر ويترك حتى ينضج.
  2. تحضير الصلصة:
    في وعاء صغير، تخلط صلصة الصويا، العسل، نشا الذرة، الماء، الفلفل الأسود وصلصة sweet and sour sauce
  3. تحضير اللحم:
    يحمى الزيت في مقلاة كبيرة أو مقلاة ووك على نار عالية. تضاف شرائح اللحم وتقلب جيداً حتى تتحمر وتنضج. ثم يزال الى طبق آخر
  4. تشويح الخضار:
    في المقلاة نفسها، يضاف البصل والفليفلة وتقلب حتى تذبل.
  5. إضافة الصلصة:
    يوضع اللحم إفي المقلاة مع الفليفلة والبصل ، ثم تضاف الصلصة ويحرك جيداً. يترك الخليط على نار متوسطة ل حتى تتكاثف الصلصة وتغلف اللحم والخضار.
  6. إضافة الكاجو:
    يضاف الكاجو المحمّص في النهاية ويقلب لمدة دقيقة حتى يبقى مقرمشاً.
  7. التقديم:
    يقدم لحم البقر بالكاجو ساخناً إلى جانب الأرز الأبيض او المعكرونة المسلوقة الرفيعة ويمكن تزيينه بالقليل من البصل الأخضر أو السمسم.

Chinese Beef with Cashew Nuts & White Rice

Ingredients

For the Beef with Cashews

  • Half kg of beef, thinly sliced
  • 1 cup roasted, unsalted cashews
  • 1 red bell pepper, sliced
  • 1 yellow pepper, sliced
  • 1 onion, sliced
  • 1 teaspoon ground cinnamon
  • For the Sauce
  • 3 tbsp soy sauce
  • 1 tsp honey or brown sugar
  • 1 tsp cornstarch
  • ½ cup water
  • A pinch of black pepper
  • 1 tablespoon sweet and sour sauce

For the White Rice

  • 2 cups basmati or long-grain white rice
  • 3 cups water
  • salt
  • 1 tsp oil or butter

Method

  1. Prepare the rice:
    Rinse the rice well until the water runs clear. Place it in a pot with the water, salt and oil. Bring to a boil, then reduce the heat, cover and cook for 15–18 minutes, until tender. Leave covered for another 5 minutes, then fluff with a fork.
  2. Prepare the sauce:
    In a small bowl, combine the soy sauce, , honey, cornstarch, water, black pepper and sweet and sour sauce.
  3. Cook the beef:
    Heat the oil in a large skillet or wok over high heat. Add the beef and stir-fry for 3–5 minutes, until browned and cooked through. Remove and set aside.
  4. Stir-fry the vegetables:
    Using the same pan, add the onion and red and yellow bell pepper and stir-fry for 2–3 minutes.
  5. Add the sauce:
    Return the beef to the pan and pour in the sauce. Stir well and cook over medium heat for 2–3 minutes, until the sauce thickens and coats the beef and vegetables.
  6. Add the cashews:
    Add the roasted cashews at the end and toss for about 1 minute, keeping them crunchy.
  7. Serve:
    Serve the Chinese beef with cashew nuts hot alongside steamed white rice Or thin boiled pasta.
