أقراص كبة اللقطين المحشوة بالجوز والبصل والسماق على الطريقة اللبنانية

المقادير

عجينة الكبة:

  • كيلو لقطين (قرع) مقشّر ومقطّع
  • كوبان برغل ناعم
  • بصلة متوسطة، مفرومة
  • كوب طحين، أو حسب الحاجة
  • ملعقة صغيرة ملح
  • ملعقة صغيرة كمون
  • نصف ملعقة صغيرة قرفة
  • نصف ملعقة صغيرة فلفل أسود
  • زيت نباتي للقلي

للحشوة:

  • كوبان جوز، مجروش خشناً
  • 2 بصل ، مفرومة ناعماً
  •  3  لاعق كبيرة زيت زيتون
  • ملعقتان كبيرتان سماق
  • نصف ملعقة صغيرة ملح
  • نصف ملعقة صغيرة فلفل أسود
  • نصف ملعقة صغيرة قرفة، اختياري

طريقة التحضير

تحضير اللقطين

  1. : يُسلق اللقطين أو يُطهى على البخار حتى يصبح طرياً، ثم يُصفّى جيداً من الماء ويُهرس حتى يصبح ناعماً.
  2. يُغسل البرغل ويُترك منقوعاً بقليل من الماء لمدة 15 دقيقة، ثم يُصفّى جيداً.
  3. في وعاء كبير، يُمزج اللقطين المهروس مع البرغل والبصل المفروم والطحين والملح والبهارات. تُعجن المكونات جيداً حتى تتماسك العجينة ويمكن تشكيلها بسهولة. إذا كانت طرية جداً، يُضاف القليل من الطحين.

تحضير الحشوة

  1. يسخّن زيت الزيتون في مقلاة، ويُضاف البصل ويُقلّب حتى يذبل ويصبح ذهبياً. يُضاف الجوز والسماق والملح والفلفل والقرفة، وتُحرّك المكونات لبضع دقائق. تُرفع عن النار وتُترك لتبرد.
  2. تُبلّل اليدان بالقليل من الماء، وتُؤخذ كمية من عجينة الكبة وتُشكّل على شكل كرة، ثم تُفتح من الوسط وتُحشى بخليط الجوز والبصل والسماق.
  3. تُغلق العجينة جيداً وتُشكّل على هيئة أقراص أو حبات كبة مدببة من الطرفين، كما في الصورة.
  4. تُسخّن كمية وفيرة من الزيت في مقلاة عميقة، وتُقلى أقراص الكبة على دفعات حتى تصبح ذهبية ومقرمشة من الخارج.
  5. تُرفع على ورق المطبخ لامتصاص الزيت الزائد، وتُقدّم ساخنة أو بدرجة حرارة الغرفة.

نصيحة: للحصول على أقراص متماسكة ولا تتشقق أثناء القلي، يجب تصفية اللقطين جيداً من الماء، كما يمكن وضع العجينة في الثلاجة لمدة 30 دقيقة قبل تشكيلها.

Lebanese Pumpkin Kibbeh Stuffed with Walnuts, Onion & Sumac

Ingredients

For the Kibbeh Dough:

  • 1 kg pumpkin, peeled and cut into pieces
  • 2 cups fine bulgur
  • 1 medium onion, finely chopped
  • 1 cup flour, or as needed
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • ½ teaspoon cinnamon
  • ½ teaspoon black pepper
  • Vegetable oil, for frying

For the Filling:

  • 2 cups walnuts, coarsely chopped
  • 2 large onions, finely chopped
  • 3 tablespoons olive oil
  • 2 tablespoons sumac
  • Half  tsp salt
  • Half tsp black pepper
  • Half tsp cinnamon, optional

Method

Prepare the pumpkin

  1. Boil or steam the pumpkin until tender. Drain it very well, then mash until smooth.
  2. Rinse the bulgur and soak it in a little water for about 15 minutes. Drain thoroughly.
  3. In a large bowl, combine the mashed pumpkin, bulgur, chopped onion, flour, salt, cumin, cinnamon and black pepper. Knead well until you have a soft but firm dough that can be shaped easily. If the dough is too soft, add a little more flour.
  4. Prepare the filling
  5. Heat the olive oil in a pan. Add the onions and sauté until soft and lightly golden. Add the walnuts, sumac, salt, pepper and cinnamon. Stir for a few minutes, then remove from the heat and let the filling cool.
  6. Wet your hands lightly with water. Take a portion of the kibbeh dough and shape it into a ball. Make an opening in the centre and fill it with the walnut, onion and sumac mixture.
  7. Seal the dough carefully and shape it into oval kibbeh pieces with pointed ends, as shown in the picture.
  8. Heat plenty of vegetable oil in a deep frying pan. Fry the kibbeh in batches until golden brown and crisp on the outside.
  9. Drain on paper towels to remove excess oil and serve warm or at room temperature.

Tip: For kibbeh that holds its shape and does not crack while frying, make sure to drain the pumpkin very well. Chilling the dough for about 30 minutes before shaping also helps.
